By default, when you start Microsoft Excel, Excel will show the Start Screen with templates list, Recent files, Pinned files, share with me and other for you choose. as picture as below.
Following the steps if you want to bypass the Start screen and start with a blank workbook when you start the Excel.
1. Go to File menu => then click Options
2. In Excel Options Dialog => General => go to Start up Options
3. Clear Show the start screen when application starts => then click OK
